Carrot Cake | Franky Chocolate

Mmmh this carrot cake tastes so delicious! You have to try this recipe. 😋

Ingredients for 1 carrot cake:
▪️ 400g carrots
▪️ 1 pinch of salt
▪️ 1 tsp orange zest
▪️ 200g ground almonds
▪️ 200g flour
▪️ 2 tsp baking powder
▪️ 4 eggs
▪️ 100g erythriol
▪️ 100ml sunflower oil
▪️ 2 tbsp orange juice
▪️ some coconut oil for the tin
chocolate icing:
▪️ 2 x White Chocolate & Strawberry
▪️ 2 x Milk Chocolate & Almonds

It's that easy:

  1. Preheat the oven to 180 degrees (fan oven 160 degrees). Grease the springform pan well.
  2. For the pastry, peel and finely grate the carrots. Mix the finely grated carrots with salt, grated orange zest, flour, almonds and baking powder.
  3. Separate the eggs, beat the egg whites until stiff and set aside. Mix the egg yolks with the erythritol, oil and orange juice. Add the carrot-flour mixture to the egg mixture and stir briefly. Fold the egg whites into the batter. Bake the cake in the preheated oven for about 50 minutes. Allow the cake to cool completely.
  4. Place each FRANKY Chocolate in a small bowl and microwave for 1 minute. It should then mix well into a creamy consistency. Spread the chocolate icing evenly over the cake. Enjoy 😋
